With the eco-revolution in full swing, Vancouver*s
culinary landscape is being reshaped by a smart
set of ever-more aware chefs and restaurateurs.
Each year the competition to set the pace for
responsible dining gets keener. The inaugural
Green Table Award and the third annual
Sustainable Seafood Award were determined
by two unrelated juries. Imagine our surprise,
then, when the panels arrived at the same
conclusion. O*Doul���s enjoys one of the longest
runs on Robson Street. Yet this airy, locally
focussed room with a soaring glass ceiling is
constantly reinventing itself. When BC wine
came to the fore, it was the only cellar in the
city to boast not one but four sommeliers on
staff. While some merely dabbled in political
correctness, O*Douls embraced the Ocean
Wise program with unbridled enthusiasm,
changing its menu across the board to comply.
And behind the scenes, the restaurant has fully
adopted the Green Table mantra, improving
recycling programs, reviewing purchasing policies
and working hard to reduce its carbon footprint.
Chef Chris Whittaker delights with specialties such
as citrus-cured BC sablefish, a cornucopian, locally
sourced West Coast seafood chowder, and
Merridalecider-steamed Vancouver Island mussels.
All are offered with Okanagan or Vancouver
Island wines. . . whose trip from vine to glass is
shorter than from any other region in the world.
